Absolutely love my Maximus oven. I've tried all those kitchy portable ones with the fancy marketing but there is no comparison. I use those for camping but for real cooking and authenticity, this is the best. The service from Authentic Pizza Ovens was superior to any I've experienced and still is. The oven is quality from the inside out and we have started a neighborhood pizza night which is a huge hit.

This oven is so easy to use and so efficient. We need very little wood to create hours of awesome food. And the company is very helpful and nice. We ordered from Amazon and had trouble leaving a review there but our Authentic Pizza Ovens representative was in contact about delivery and questions often and with a very quick response time. We are telling everyone we know to check these out awesome ovens and company
Setting up the oven was easy. It's solidly built. We placed on a tall heavy duty stainless steel worktable. We cured the oven with a single small firing per instructions. The first full firring gave us gorgeous looking pizzas. We first used plain dough without toppings to see how fast the over cooked. Our first crust came out perfect. We have since used the oven 4 times with even better results. You can use store bought dough - although recommend keeping temperature at around 650*f (floor at 550-600). If you use neapolitan dough (Caputo OO) then build a slightly large fire and get the stones to 750-800*F (40 minutes). But, this is 100% active cooking. Use an 8" turner to keep the pizza moving once the dough is cooked enough (60 sec) . This will yield the leoparding and cook the pie more evenly. We also used the oven to cook a chicken. Results were fantastic. We are doing lamb racks next and in the fall will shove a lasagna on the coals.. I've experimented with white oak and white birch with great results. I use alder kindling. Just make sure you use kiln dried hardwood.

I researched wood fired pizza ovens this last year. I ended up buying the Maximus Arena mobile oven. Fits perfect in my outdoor kitchen. The Pizza oven works great & thrilled I bought it. Authentic Pizza customer service = 10!
