HOW TO SET UP YOUR MAXIMUS OR PRIME PIZZA OVEN 🔥
Be sure to place your oven on top of the maximus prime oven stand for stability.
STEP 1: Put the oven thermometer into place.
STEP 2: Place the ash guard inside the oven. Put it on the side.
STEP 3: Add some extra bricks.
STEP 4: Place the ceramic dish inside.
STEP 5: Cover with the oven door.
STEP 6: Put the chimney pipe and cap on top of the oven.
STEP 7: Place the pizza peel on the side
Congratulations! You're ready to cure the oven!
HOW TO CURE YOUR MAXIMUS & PRIME PIZZA OVEN 🔥
Maximus ovens must be cured before initial use. Curing removes any residual moisture from the bricks.
STEP 1: Place wood inside the oven. Then light your fire in the center of the oven. Wait about 15 minutes for the fire to develop.
STEP 2: Open the chimney exhaust. Close the oven door.
STEP 3: Regulate temperature by removing and replacing oven door.
The temperature should hover between 200-250 degrees Celsius.
STEP 4: Maintain the fire at 200 degrees Celsius for 2 hours.
You've cured your oven and you're ready to cook!
HOW TO START A FIRE 🔥
What you need:
- Propane Torch
- Kindling
- Almond wood (or any dense, hard wood will work.)
Directions:
STEP 1: Place wood in tic-tac-toe pattern in the center of the oven.
STEP 2: Slide kindling in the gaps
STEP 3: Hold a propane torch to the kindling for a minute.
STEP 4: Open the flue. It takes about 15 minutes for the fire to fully develop.
STEP 5: Add a log to the flame half-way through.
STEP 6: Insert oven door and open the vent. It takes about 30 minutes to reach the ideal pizza-cooking temperature of 350-400 degrees Celsius.
STEP 7: Use the ash brush to push the ash guard into the fire, driving it to the left side of the oven.
STEP 8: Wrap a damp rag around the ash brush and clean the cooking surface before cooking.
Congratulations! You are now ready to start cooking!
HOW TO MAKE SIMPLE DOUGH 🔥
Ingredients:
2 cups warm water
1 teaspoon extra virgin olive oil
4 teaspoons fine salt
2 and 1/4 teaspoons active dry yeast
3 cups 00 Flour
2 cups All Purpose Flour
Procedure:
STEP 1: Using the 2 cups of warm water, let the yeast activate for 5-10 minutes until it froths.
STEP 2: In a bowl, combine all purpose flour, 00 flour, and salt together.
STEP 3: Pour the yeast gradually into the bowl while mixing.
STEP 4: Add olive oil and mix. Work it until it's a cohesive ball with some elastic bounce.
STEP 5: Grease a bowl and turn the dough inside it.
STEP 6: Cover with a damp towel overnight, until the dough doubles in size.
STEP 7: Uncover your dough and punch to deflate it.
STEP 8: Transfer the dough to a well-floured surface.
STEP 9: Do the poke test: Dough should bounce back slowly when poked.
STEP 10: Form 6 equal dough balls and start making pizzas.
Notes:
+ These are small, personal pizza size. If you want to make a larger pizza, combine 2 dough balls.
+ Dough balls can be stored in the refrigerator for up to 4 days. Remove from the fridge 2 hours before cooking.
