Customer of the Month: Mauro Trevisani

Meet our Customer of the Month for February, Mauro Trevisani, who owns our Buena Ventura 'Preto' Premium pizza oven, which features a lower dome profile making it the ideal oven for making true Italian and Neapolitan-style pizza!
Mauro and his family enjoy unwinding from the hustle and bustle of life by using their woodfired oven to enjoy the more sustainable and traditional way of living that he experienced growing up as a native Brazilian-Italian.
Where are you from and a little background information on you?
My name is Mauro Trevisani and I live in Bakersfield, California with my lovely wife, Marcia, and family. I was born and raised in Sao Paulo, Brazil, where I loved to play soccer and almost became a professional soccer player.
My favorite team is the Palmeiras! I moved to the US more than twenty years ago, initially moving to Philly then Miami, and Chicago before work led me to Bakersfield a year ago.
I work for Treehouse California Almonds and we offer some of the best quality almonds in a variety of options; almond butter and almond flour, to name a few.
Aside from work, we love spending time with our family. Our son, Matteo, got married almost three years ago now to his wife Nicole, and they recently had our first granddaughter, Vera.
We are so proud - being grandparents is simply the best! We enjoy the outdoors and celebrating our friends and family as often as we can.
As a native Brazilian-Italian, it is no wonder that we love pizza. As the foodie people we are, it was our dream to have an authentic woodfired pizza oven.
Being out of the country for more than twenty years, we wanted to get back to our roots and embellish the traditional culture of making Neapolitan pizza.
From making the dough from scratch to cooking it properly in a woodfired pizza oven, it's the closest experience to back home of a sustainable and more traditional way of living.
There is no greater happiness than mingling together and celebrating life with good food, music, and of course, soccer when it's in season!
Which oven did you choose and why did you choose an Authentic Pizza Oven?
We purchased the Buena Ventura 'Preto' Premium pizza oven. It was important to us that we found the best oven representative of our traditional roots so after researching different brands, we were drawn to Authentic Pizza Ovens.
What ultimately set them apart was their quality and remarkable craftsmanship, not to mention, the price point was attractive compared to other brands.
Also, being that the oven was already handmade and no assembly was required- All we had to do was install and cure it making it a no-brainer for us.
If I'm being completely honest, the outstanding customer service that Amber Kennedy provided sealed the deal for us as well. She was very informative and cared about the compatibility of the oven for us and not just about making the sale.
Exceptional customer service is rare anymore, so knowing we weren't just investing in an oven but had the assurance of a company equally invested in us was a key competitor advantage and we knew we were making the right decision!
Did you build a setup or have someone else do it?
I'm not a great handyman so we asked a very reputable local professional to build our outdoor kitchen and install the oven for us. They did a phenomenal job!
It is a modern white with a black countertop finish, which is why we loved the Buena Ventura 'Preto' oven so much. The charcoal greys and hues of natural browns staggered throughout the face of the oven complement our setup perfectly and we love how well it blended making the space cozy and inviting.
Again, we're foodies here, so our oven was the centerpiece of our outdoor space and is where we spend as much time as we can together with family and friends. We love it!
What is your favorite thing to cook in your oven? And have you tried other foods besides pizza?
Pizza, pizza, and pizza! Our Neapolitan dough, natural tomato sauce, and toppings are what we crave and indulge in the most.
Who doesn't love pizza?! It's so easy to make and we enjoy the traditional experience of everyone making their own woodfired pizza. It's so much fun!
We haven't cooked much of anything else but, again, we like to cook and eat the very best so we are looking forward to cooking new and different foods over time!
Cast Iron Almond Flour Pizza
10" to 12" Cast Iron Skillet
2 1/2 cups of Almond Flour
2 large Eggs
1 tsp Oregano
1 tsp Thyme
1/2 tsp Garlic Powder
1/2 tsp Salt
2 Tbsp Olive Oil
Choice of Pizza Sauce
Choice of Cheese
Choice of Toppings
1. Heat your woodfired pizza oven to approximately 200 degrees Celsius / 400 degrees Fahrenheit.
2. Mix all your ingredients in a bowl.
3. Press your dough into your cast iron skillet using a spatula or fingers.
4. Place the skillet into your woodfired oven and bake for approximately 10 to 15 minutes until the edges are golden brown.
5. Remove your dough and top it with your choice of pizza sauce, cheese, and toppings.
6. Place your pizza back into your woodfired oven and cook until the cheese has melted and toppings are cooked to desire. (Approximately 3-5 minutes).
Pizza Dough- Whatever your go-to recipe is! *True authentic Neapolitan pizza dough is best when made and refrigerated at least 2 to 3 days in advance. It helps to naturally ferment the dough and gives it a nutty, complex flavor.*
Simply Tomatoes/Simple Tomato Sauce (The San Marzano variety is a great simple sauce recipe that mimics the flavors in Naples).
Fresh Basil if desired.
Choice of toppings if desired.
1. Heat your woodfired pizza oven to approximately 425 degrees Celsius / 800 degrees Fahrenheit
2. Make your pizza dough and roll it out to the desired size and thickness.
3. Top with your tomatoes/simple tomato sauce, fresh mozzarella, and choice of toppings.
4. Place your pizza directly on the cooking surface in your woodfired oven and cook for approximately 3 minutes until cooked through.
Note: Authentic Neopolitan pizza crust is typically puffed edges and very thin towards the middle.
