Meet our Customer of the Month for January 2026!
Happy New Year, everyone!
We are pleased to introduce our first customer of the month for 2026.
Please meet: Don Biad.
Don and his wife were born and raised in New Mexico, a state known for a cuisine of diverse and powerful flavors. They met when they were both still in college and 34 years later, they’ve built a fruitful life together with their four children and six grandchildren (and another one on the way.)
When their food processing company specializing in chili peppers isn’t keeping them busy, they love hosting gatherings where everyone can cook together and enjoy each other’s company. Pizza nights, specifically, are a huge deal in the Biad family household.

So when they decided to remodel their back porch, they wanted to focus on what mattered most to them—which was a space for entertaining and making good food.
After exploring multiple options and consulting with our team, Don finally decided on the oven that would work best for their family. Classic Margherita Pizza (Basil-Mozzarella)
Ingredients For the Dough (makes 4 pizzas):
500g (4 cups) "00" flour or bread flour
325ml (1⅓ cups) lukewarm water
10g (2 tsp) fine sea salt
3g (1 tsp) active dry yeast
1 tbsp olive oil
For the Topping (per pizza):
80-100g (⅓ cup) San Marzano tomato sauce (crushed tomatoes, salt, touch of olive oil)
100g (3.5 oz) fresh mozzarella, torn or sliced
Fresh basil leaves
Extra virgin olive oil for drizzling
Pinch of sea salt

Instructions - Prepare the Dough:
- Mix yeast with lukewarm water and let sit for 5 minutes
- Combine flour and salt in a large bowl, make a well in the center
- Pour in yeast mixture and olive oil, mix until a shaggy dough forms
- Knead for 10 minutes until smooth and elastic
- Let rise covered for 1-2 hours until doubled, then divide into 4 balls
- Let dough balls rest 30 minutes before stretching
Fire Your Oven:
- Heat your wood-fired oven to 450-500°C (850-900°F).
- The floor should be hot enough that a small amount of flour browns in seconds.
Assemble and Bake:
- Stretch dough to 10-12 inches on a floured surface
- Spread thin layer of tomato sauce, leaving a border for the crust
- Add torn mozzarella pieces evenly
- Slide onto your pizza peel with a quick motion into the oven
- Bake for 90 seconds to 2 minutes, rotating once for even cooking
- Remove when crust is blistered and cheese is bubbling
- Immediately top with fresh basil, drizzle of olive oil, and sea salt
